Wilder Lazo is a well known coffee producer from Huila, Colombia. In the past few years he focused on importance of genetics and processes, which enable him to bring true characteristics of each variety.
Process: first step is to place cherries inside the Grainpro bags to ferment for 60 hours. Then cherries are pulped and placed inside plastic tanks where coffee ferments anaerobically for 100 hours. After the final fermentation, coffee is washed leaving some mucilage on the parchment. Then coffee is dried under the sunlight for around 15days.
